Apple-Glazed Turkey Breast
A lean protein dinner- try serving with fresh-cut carrots strips tossed with lemon juice. Less than $2.50/serving!
Ingredients
8 oz turkey breast tenderloin
1 1/2 tsp lemon juice
1 1/2 tsp olive oil
1/4 tsp seasoning salt
1/4 tsp dried, crushed sage leaves
2 cloves garlic, minced
1 tbsp apple jelly, melted
4 very thin slices lemon
Directions
Preheat broiler
Split the tenderloin in half horizontally to get 2 4-oz servings (each should be about 1/2” thick) and place on an unheated broiler pan
In a small bowl mix lemon juice, oil, salt, sage, and garlic; marinade the turkey (both sides of both pieces) by brushing mixture onto it
Broil the turkey 4 to 5” from the source of heat for about 5 minutes.
Turn turkey over and place lemon slices (2 on each tenderloin). Broil for 2 more minutes
Using a CLEAN brush, brush lightly with apply jelly and broil until tender and 170 degrees F inside (about 2-3 minutes)
Garnish with fresh sage and eat up! (but remember veggies and maybe some whole grain rice?)
